Ritual

The shared ritual

How to serve it

The glass

A thin glass, so the color and the aroma can open. Never a shot glass.

The temperature

Serve at 18–20 °C (64–68 °F). No ice, no hurry.

The pace

Small, slow sips. Let it rest on the tongue. The fire reveals itself in the second.

At the bar

A red that holds

Cochineal gives the Espadín a color that stays true in a thin glass and in the cocktail. For bar programs in Miami we share serves, specs and the story behind the red, so the bartender can tell it at the table.

Our Mezcals

Four expressions, joven and 100% maguey, made by one hand in one distillery. From the red to the rare.

A. angustifolia + cochineal — 46% ABV · 2,376 bottles. The signature. Finished with cochineal, the red that started it all.

A. americana — 46% ABV · 792 bottles. A great, slow agave, harvested only when it is ready.

A. rhodacantha — 48% ABV · Numbered by hand. A rare agave in a numbered edition, each bottle marked at the distillery.

A. convallis — 48% ABV · Numbered by hand. One of the most demanding agaves to distill. It is earned, not rushed.
