The red that started it all
Espadín is the agave at the heart of Oaxacan mezcal, and the one Benjamín Morales García knows best. We take it one step further: once distilled, it is finished with cochineal, the natural red that lives on the nopal cactus and that Oaxaca sent to the world for centuries.
The result is a mezcal you recognize across the room. Agave, wood fire and stone, turned red. In a thin glass it catches the light; at the bar it holds its color in the cocktail.
