Hand-numbered Fuego Bendito Jabalí on a steel stand

Jabalí

Bottle of Fuego Bendito Jabalí artisanal mezcal
Agave convallis · numbered edition

Earned, not rushed

Jabalí is known among mezcaleros as one of the most demanding agaves to distill. Its fermented must foams in the still, so the work is slow and the yield is low.

It is released in a numbered edition, each bottle marked by hand at the distillery in San Dionisio Ocotepec.

The shared ritual

How to serve it

The glass

A thin glass, so the color and the aroma can open. Never a shot glass.

The temperature

Serve at 18–20 °C (64–68 °F). No ice, no hurry.

The pace

Small, slow sips. Let it rest on the tongue. The fire reveals itself in the second.

One maestro, four agaves

The other mezcals

A. angustifolia + cochineal — 46% ABV · 2,376 bottles. The signature. Finished with cochineal, the red that started it all.

A. americana — 46% ABV · 792 bottles. A great, slow agave, harvested only when it is ready.

A. rhodacantha — 48% ABV · Numbered by hand. A rare agave in a numbered edition, each bottle marked at the distillery.
